Chicken Curry

Shredded ginger

Chopped garlic

Chopped or sliced onions

Make 3/4 of a mug of thick curry paste from curry powder with a little chilli powder
Fry ginger garlic and onions till aromatic

Add 4 star anise, cinnamon stick and bay leaves

Add curry paste and gently fry the 'rumpah'- mixture till the chilli oil comes to the surface

Add raw chicken, and gently stir fry till chicken has turned white(cooked then)

Add part boiled potatoes to this

Add coconut cream or coconut milk to thicken and make rich

Add salt and white pepper to taste.

Simmer till all is completely cooked.
